* .config/git/config: Default to my gnu.org address.

- Default to my gnu.org address (and use fencepost for smtp).
- GPG-sign commits by default again.
- Rename work alias to sfl, add canonical, and simplify gnu and kelar
  to only set the email now.
- Update github handle.
